Smashed potato bites

These cute potatoes are a great side dish or perfect for an appetizer buffet! First, steam them in the oven. Put about an inch of water in a pan. Place small red potatoes in the water and cover with foil.
Bake them at 425 until they're soft-about 45 min.
Use a potato masher to flatten each potato.
Sprinkle with olive oil and put them back in the oven for about 30 min. I think next time I'll put them under the broiler to crisp them a bit more. Top with shredded cheese, sour cream, bacon bits and green onions. Yummmm!

  10. The roasted potatoes look good. However, they become unhealthy once the fatty sour cream, fatty cheese and fatty bacon are added. No wonder people are disillusioned that they are eating "healthy".
