Zucchini Crisps

Finding veggie side dishes is hard at my house.  This is a different one that went over pretty well.  I ate the leftovers for lunch and they were delish.  I will definitely serve these next time I have guests.

Gather these ingredients:

Cut the zucchini into quarter inch slices.

Put them in a single layer on a greased baking sheet.

Drizzle each and every one with olive oil.  Sprinkle with salt and pepper.

Sprinkle each zucchini slice with a generous pinch of panko bread crumbs.
Then top each one with a generous pinch of parmesan cheese.

Bake for 20 minutes at 400 degrees.  The zucchini doesn't get crisp but the topping does.

A fresh idea for a veggie side dish.
