Taco Pie

The beauty of this taco pie is it makes 2.  So depending upon the size of your family, you can freeze one or share one!

Brown 1 lb. of ground beef and add taco seasoning.  I have a secret.  I don't drain the meat when I make tacos or spaghetti.  I buy the lean meat so I figure a little fat only adds flavor.  Get over it.

Add refried beans and heat just until combined. Then spread into the bottom of 2 frozen pie shells.  You could make your own crust or use the refrigerated kind, I guess.  But the frozen ones come in a disposable pie tin which means fewer dishes.  'Nough said.

Then, layer black beans and cheese on the bean/meat mixture.

Add crushed tortilla chips on top. I like to use the highly technical method of smashing the chips in the bag.

Bake for 25 minutes at 350 degrees.

Add some taco sauce, lettuce, tomato, sour cream or your fixins' of choice.

1 lb. ground beef
1 can of black beans
1 can of refried beans
2 frozen pie shells
1 cup of crushed tortilla chips or taco shells
taco seasoning
1 1/2 of shredded cheese (your choice, but I used reduced fat cheddar)
taco fixins' of your choice (lettuce, tomato, taco sauce, sour cream, etc.)

Brown the ground beef.  Add taco seasoning and refried beans until combined.  Spread evenly into 2 pie shells.  Add a layer of black beans (1/2 of a can for each pie). Then a layer of cheese (3/4 cup on each pie). Lastly a layer of crushed chips.
Bake for 25 minutes on 350 degrees.  Broil to brown the chips the last 2 minutes.

If you plan to freeze one, freeze uncooked.

Lego Birthday Party

My dear friend, Ana, threw an adorable Lego birthday party for her 3 year old cutie, Jacob.  It was so fantastic that I had to share the details with you! (A word of warning-I used the word "Genius" way too many times in this post!)

The Lego font on the banner is a cool touch. 
 The cheese and crackers Legos were sure to be a hit with 3 year olds!

These little crayon Lego men Ana made using a Lego ice cube mold are my favorite little detail.

Ana wrapped the juice boxes in a Lego scrapbook paper-what a great idea!

 Ana's 6 year old son, Peyton constructed this Lego utensil holder.  Genius!

Adorable game-the kids sucked the Lego to the end of a straw and then transfered it to a plate.  
Genius way to keep 3 year olds busy!

This cake is fantastic-a red and blue fondant Lego cake decorated with colorful edible Lego men using that same ice mold she used for the crayons (Ana said she actually used 2 separate molds-one for food and one for non food-good choice!)
And even cuter than the cake is the birthday boy-he's a-dor-able!

I was so impressed by all of the details that Ana created.

Top 10 New Years Resolutions I'm NOT Making

In 2013, I do NOT resolve to:

1.  Exercise 3 times per week
2.  Lose weight by spring break
3.  Count calories
4.  Cut out sugar
5.  Organize every room in my house
6.  Save more/spend less
7.  Catch up on 10 years of scrapbooking
8.  Eliminate/cut back on social networking
9.  Quit spending so much at Starbucks
10.  Work smarter at my job

This is my 40th year of life (it hurts to type that).   I have made New Years Resolutions approximately 25 out of those 40 years.  I dare say there have been very few (o.k.-more like NONE) of those resolutions that I have actually fully accomplished.  
So why set myself up for failure?   None of the items listed are bad-many of them are great! So this is not to say that I won't be giving attention to many of these areas in my life throughout 2013.  
But I want this year to be different.  Instead, I wanted to set 1 goal that outweighs all others.  An attainable goal, a goal with eternal value that doesn't only revolve around ME.    

So the Hughes Family GOAL for 2013 is for us to read our Bible through together by the end of this year.   We are into Genesis currently and it has been such a blessing already-such precious time reading and just being together.   Our current plan is to read 4 chapters a day (we each read 1 chapter aloud).  This allows us to skip on extra busy days which realistically happen too often.

It's a GOAL that I can be excited about.  And somehow I feel lighter this New Years than in previous years.  2013 is going to be amazing!
